Whilst we’ll definitely indulge in some champagne and baked goods during the holiday season, we wanted to give you the option to treat yourself to something delicious that’s nutritious at the same time. Created by the chefs at one of Thailand’s most popular wellness resorts – Kamalaya – we’re sharing their Raw Chocolate Cake and Strawberry Mojito with you.


Walnut base ingredients

500 g Walnuts
2 tbsp Cacao Powder
1 tbsp Flax Seeds
1/2 tsp Cinnamon Powder
1/4 tsp Salt
1 tsp Vanilla Extract
16 Pitted Dates
Zest and Juice of 1 orange

Chocolate frosting ingredients

280 g Organic honey
630 g  or 4 medium Avocados
24 g Vanilla Extract
120 g Cacao Powder


Combine all the ingredients for the base in a food processor and mix together (not too fine). Place the batter in a springform cake ring and chill in the fridge for at least 2 hours. Blend all the ingredients for the frosting in a blender until you have a smooth consistency. Pour the mixture over the walnut base and spread evenly. Leave to set over the fridge over night. The raw chocolate cake is delicious and best served with date and coconut ice cream.

This berry-licious mocktail is rich in anti-oxidants and vitamin C, perfect to replenish your body during the holiday season.


Juice of 2 medium fresh green Apples
Juice of 2 thick pineapple slices
Juice of 1 lime
4 Medium sized strawberries
Handful of mint leaves


Blend all ingredients in a food processor or blender until berries are liquefied. Serve in a tall glass with mint leaves and ice cubes.
